

We are inside and hopefully not running to the store every two seconds. I’ve been trying to utilize all of the things in the kitchen, something my Mom is really passionate about.
We had a surplus of fruit and everything seems to ripen at once so the fix for avoiding waste was making some jam.
I had strawberries, kiwis, a few black berries, peaches and pineapple – threw in some orange peel, brown sugar, cinnamon and one clove.
Bring to a boil, use your utensil to breakdown the fruit some (if you’re lazy like me and not trying to sit over the pot for hours) and reduce the heat and lit it simmer until it gets to your desired consistency. I like mine chunky when there is a mix of fruit but smooth when there’s only one fruit as the star.
Freezing fruit to make smoothies or fruit bowls is another great way to avoid food wastage as well as making fruit cubes for infused water.
Its been really fulfilling to feel like I’m getting the most out of all of my produce. Mindfulness has been showing up for me in more practical ways and I love it here.
